Merry Christmas everyone! C and I woke up excited because who doesn’t get excited on Christmas Day? More so this year because we are celebrating our first Christmas together as man and wife, AND we are tasked to host dinner for our family as well!
We decided against a large turkey this year because it was only a small gathering and we wouldn’t have been able to finish such a big bird, so we got the next best thing – chicken. And we got a mighty fine 2 kg bird. We looked at our fridge as well for inspiration and found some apples that we had forgotten to eat throughout the week. I decided that we should make some apple based and decided to stuff our chicken with a mixture of apple, butter and honey.
We were craving something Fall-ish even though it is already the end of the year. We decided that honey glazed carrots would make a fantastic side dish to our chicken, and it would be so easy to roast the carrots alongside our chicken and allow the drippings from the bird to glaze the root vegetables.
Even better was when C decided to throw some garlic into the roasting pan..

We topped our bird with a slice of lemon just before throwing it into the oven..
Mmm..look at the char on the skin..perfectly crispy, sweet and juicy skin with equally tender meat underneath…
Paired with sweet, smokey carrots..
Among the four of us, we managed to finish the entire bird and I found my mother sneakily licking her fingers clean because the marinade was so , so good. Try it! I rarely say this but honestly this was a winner.

Apple stuffed Roast Chicken with Honey Glazed Carrots
1 Whole Chicken, about 2kg
3 small gala apples
Carrots, halved lengthwise, about 800g worth
2 whole garlic
Salt and pepper
Wash chicken thoroughly, including the cavity, and pat dry.
Rub salt, pepper, dried oregano and basil and leave aside for at least 1 hour
Chop apples into small cubes and mix in with honey and melted butter
Stuff chicken with the apple honey mixture and tie with cooking string
Place carrots and garlic into a roasting pan
Spray some olive oil to prevent sticking
Drizzle honey on top of the carrots
Place a rack on top of the roasting pan and place whole chicken on top
Top with a slice of lemon
Roast chicken for about 70 minutes.
Check internal temperature to ensure chicken is cooked through.
Let rest for 10 minutes and serve warm.
We enjoyed ours with a side of dinner rolls and some carrot-sweet potato soup!
